Peach Tomato Feta Salad by @basicswithbails is serious salad goals and it pairs perfectly with our newest cider! â â
Prep Time: 15 minutesâ
Servings: 4 servingsâ
INGREDIENTS:â â
PEACH SALADâ
3 ripe peachesâ
1 pint multicolor cherry tomatoesâ
1 green onionâ
Handful fresh basil leaves (approx 15 leaves)â
2/3 cup feta cheeseâ
DRESSINGâ
2 tbsp olive oilâ
2 tbsp red wine vinegarâ
2 tsp maple syrupâ
1 tbsp fresh lemon juiceâ
1/2 tsp garlic powderâ
Salt + black pepperâ
DIRECTIONS:â
1) Cut your peaches into thin slices. You want them to be ripe but still firm enough to hold their shape.â
2) Cut the cherry tomatoes in half, thinly slice the greenâ
onions, and chop the basil leaves into smaller pieces. Fresh basil is key for that aromatic touch.â
3) In a small bowl, whisk together the olive oil, red wine vinegar, maple syrup, lemon juice, garlic powder, salt, and pepper. Taste and adjust the seasoning as needed.â
4) In a large bowl, combine the sliced peaches, halved cherry tomatoes, crumbled feta cheese, sliced green onions, and chopped basil leaves.â
5) Pour the vinaigrette over the salad and gently toss everything together until well coated.â
6) You can serve this salad immediately or let it chill in the fridge for about 15-20 minutes to let the flavors meld together.â
7) If you want, sprinkle a little extra feta and some more fresh basil on top before serving.â
